Today I thought I'd post my altered recipe for Skinny Monkey Cookies
I have a bit of a sweet tooth, so I found the original recipe a little too "skinny", so I "fattened" it up a little! These are dairy and wheat free!
Skinny Monkey Cookie Cups
3 ripe bananas
2 1/4 cups old fashioned oats
1/2 cup peanut butter
1/4 cup unsweetened cocoa powder
1 cup unsweetened apple sauce
1/4 tsp salt
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips
Directions:
Mix together all ingredients except chocolate chips. Add chocolate chips and dollop a tablespoon or so into a 24 mini cupcake tin lined with unbleached papers. Bake at 350F for about 15 min.
Makes 24 minis at 93 calories a piece.
I find this quite delicious, but they are still not as sweet as your run of the mill cookie. A great on the go breakfast (I have 2 or 3) or just a treat when you want something sweet but don't want something junkie.
